I don't think we ever see a healer working on a dead body in canon? There's precedent for comatose body without a soul in it being workable, though, so I'm going to take that as a vague indication that dead people are within her ability. (Also Mitchell gave a convincing argument below.) And probably pretty easy work, given the magic levels in Puella Magi.
I also only just realized that healing people made completely of magic is...probably not covered under this skill. Physical manipulation of flesh = deeeerp no flesh there. But once she gets her psychic/psychological healing skill back, your body will be putty her in hands, Pascal. SORRY I SHOULD EDIT. /me flops off to do so
